MEXICAN RICE

I learnt this recipe from my friend Shanthi. When I tried everybody liked it. It's so perfect for lunch box. Kids will like this tomato sauce. So, it will be perfect for Monthly mingle 31 kids lunches hosted by Srivalli started by Meeta.



Ingredients

Rice – 1 cup
Onion – 1 Chopped, 2 sliced
Garlic – 3 cloves crushed
Cabbage – 1 cup shredded
Capsicum – 1 sliced
Tomato – 1 large chopped
Soy Sauce – 2 tsp
Chill Powder – 1 tsp
Ghee – 1 tbsp
Oil – 6 tbsp
Salt to taste


Method

Heat the Ghee in a vessel and fry the chopped onion for a little time.
Add the crushed garlic and fry for 2 minutes.
Add the rice and fry for 2 minutes.Add just enough water to cook the rice, add salt, cover and cook slowly.
In a broad vessel, heat the oil and fry the sliced onions till golden brown in color.
Remove the sliced onions and in the same oil fry the cabbage for 2 minutes or until soft.
Remove the cabbage and in the same oil, fry the capsicum for 1 minute.
To the Capsicum add the tomato, Soy sauce, Chili powder and salt.
Add the fried onions, cabbage and rice and mix well.

Yummy Mexican rice is ready.
