PEARL MILLET FLAKES DUMPLING/ கம்பு அவல் கொழுக்கட்டை


Millets have lots of nutrients, it helps in weight loss too. Instead of making upma I thought of making this. Tried for evening snack and it cam out so good. Kids liked it. 





INGREDIENTS

Peral millet flakes / கம்பு அவல் - 1 cup

Onion - 1

Green chili - 4

Grated coconut - 1/2 cup

Curry leaves - few

Coriander leaves - few

Salt to taste


For Tempering

Oil - 1 tbsp

Mustard seeds - 1 tsp

urad dhal - 1 tbsp

Channa dhal  - 1 tbsp

 




METHOD

Soak the flakes / Aval in water for 15 minutes. And wash it.




In a strainer add a cotton cloth and add the soaked flakes and drain it nicely. Keep it aside.



Heat oil in a pan, add mustard seeds, let it splutter. Add urad dhal, channa dhal and saute. Add chopped onions , green chilis , curry leaves and coriander leaves. saute.


Add grated coconut and salt and sauté nicely. 




In a bowl add the drained flakes mixture.




Add the sautéed onions etc and mix well. 



Grease the Idli plate and make balls or desired shapes and steam it for 5 to 7 minutes.




Enjoy with your choice of chutney.

KARA CHUTNEY / கார சட்னி

 I am making this chutney for so many years but not posted in my blog. Want to document this for my kids. This chutney goes well with idli , dosa etc.






INGREDIENTS


Onion - 1
Tomato - 2
Red chili - 7 to 8 (adjust according to your taste)
curry leaves - few
Salt to taste
Oil  - 1 tbsp
Mustard seeds - 1 tsp
urad dhal - 1 tsp


METHOD

Soak  the red chilis in warm water for 10 minutes.





And grind to a paste.


Heat oil in a pan and temper with mustard seeds , urad dhal and curry leaves
Add chopped onions and sauté.





Add chopped tomato or grounded tomato and sauté well.



Add the grounded red chili paste and salt to that and cook well till the raw smell goes.


Add water and cook till it reaches the current consistency.



Serve with idli or dosai.

PACHAI MOAR KULAMBHU/பச்சை மோர் குழம்பு



Pacha moar kulambhu is easy to make , no cooking is needed. That is why the name . Learnt this from my friend chitra . Everyone in my family loves this. Easy to make and taste yum too.







INGREDIENTS

Coriander leaf - 1 bunch

Green chili - 3 to 4

Hing - 1/2 TSP

Grated Coconut  - 2 tbsp or 4 pieces

Salt as per taste

Curd - 1 cup

Coconut oil - 2 tbsp

Curry leaves - few

Mustard seeds - 2  tsp










METHOD

Combine  the coriander leaves, salt, hing, green chili, coconut  in a mixer and make a paste.






Beat the curd nicely and add this mixture to the curd.

Heat coconut oil in a pan , temper the mustard seeds and curry leaves.

The smell of the curry leaves will infuse in the oil and give a nice flavour to the mix.

Enjoy with sevai or iddiyappam.

BANANA FRITTERS / NENTHRAM PAZAM BHAJJI

We tasted this in Guruvayoor , we liked this. We don't use maida in home, but this recipe called for it so i have to. I borrowed camera form my friend. Thanks to her. I was not so happy to use maida but it was tasty.






INGREDIENTS

Nenthram Pazham  - 1

Maida  1 cup

Sugar - 1/4 cup

yellow colour - one pinch

salt - one pinch

oil for frying




METHOD


Mix all the ingredients and make like a paste.

Dip the banana pieces and fry it in oil.

I also made mango bajji also.

STRAWBERRY LEMONADE

Fresh juices will be a part of our diet in summers. I tried this recipe from Cooks joy. My son broke my camera so,I am using my mobile so please bear with me for the quality of picture. Vardini's photo  was awesome and i can't stand near to that.I did n,t get the colour because of the quality of the strawberries.




INGREDIENTS
Strawberry 8 nos
Lemon juice from 2 nos
Water -- 1 cup
Sugar as per taste


Method


Make puree of strawberries and strain it.

In a bender add strawberry puree and lemon juice , sugar and water and blend it.

OATS WHEAT LADDU


I learnt this recipe in my Tupperware assembly. i have  made some changes in the recipe. It is good for dieters also.I used multigrain atta and oats here. We can make with kanchi mavu also.It is easy and we can prepare it so fast.


Ingredients




oats - 1 cup

jaggery  - 1 1/2 cups

ghee - 1 tbsp

badam or cashew - 10

milk - 1 cup



Method

Heat ghee in a pan and roast oats.




Roast oats until it changes it's colour.





Roast atta until it changes to  light Brown.



Ground oats to powder, and mix oats powder , atta , nuts and grated jaggery  in a bowl.



Add milk to the mixture till you can make balls. 


Make small balls out of this mixture and store it in a airtight container.

Note

  • we can use sugar instead of jaggery
  • We can use ghee instead of milk.

KOTHU IDLI - A LEFT OVER MAGIC


We went to a restaurant called Dosa Calling in Adyar. They have wonderful varieties of dosas. We enjoyed having all kinds of dosas. I love their Manchurian dosa so.. much. They had this kothu idli in their starters. All of us enjoyed having this, and tried this in home it came out well , nowadays i make idlis in excess for making this as a evening snack.
Ingredients


idli - 7 to 8
Onion - 1 big size
tomato - 2
Sambhar powder - 1 tbsp
salt to taste
garam masala - 1/2 tbsp
Oil, mustard seeds , urad dhall, curry leaves for tempering

Method


Chop the idlis in to small cubes.


Heat a kadai with oil and pop up mustard seeds add urad dhall and curry leaves. Add onions and saute till they turn pink.




Add  tomatoes and saute.



Add Sambhar powder and salt and saute 



Saute till the raw smell goes and it leaves oil.



Add the chopped idlis and add little water and close with the lid.

After 2 minutes the yummy kothu lidi is ready

Dosa Pizza

Thank you friends , for the lovely comments for the template. All the credit goes to my husband. When he was searching and asking me suggestions, my daughter was watching all that. She was nagging me for so many days after seeing her cousin Ashwin’s blog. I was somehow managing saying yes, I will do it. Finally she asked her father to do, he has done in few minutes. She loves Barbie and she wanted a Barbie template. He has done for her. Hmm, I was asking him for so.. many days, but when come to daughter, it took only few minutes. My sweet daughter’s blog “My Own Space in the Web”, Kindly check it out.

Coming to my recipe, last week I was so tried I can’t even think of any snacks for the evening. I had dosa batter in the fridge, so I made this , my kids liked so much, they finished in few seconds. Next day for breakfast when I made dosa, my lil one asked amma, are you going to make dosa pizza again!!

Ingredients

Dosa batter
Cheese
Onion – 1
Tomato – 1
Corn – one handful
Capsicum – 1
Spinach ( palak) - one handful
Tomato sauce
Oregano

Method


Chop the onion, capsicum into lengthwise, chop tomato into cubes.
Combine, onion, capsicum, corn and spinach in a microwave safe bowl, smear a few drops of
Olive oil and cook for 2 minutes in micro high.
Heat a griddle and spread dosa batter as a thick layer.
Spread the vegetables over the dosa. My daughter likes crispy tomatoes so I add the cubes of tomato for her.
For my son, I spread tomato sauce and spread the veggies over that.
Spread the grated cheese over the veggies, sprinkle oregano, if you want spicy you can sprinkle chili flakes too. Close with a lid, cook until the cheese melts.
Delicious dosa pizza is ready in minutes.

IDIYAPPAM WITH THENGAI PAL

This is my favourite dish. My son love this so.. much. When I was in school days my mom prepares using sevai nazhi (photo given after the recipe). She makes idli using only par bolied rice batter, and keep the idlies in the nazhi and make sevais. I use to help her. It’s a real pain. Nowadays we get instant idiyappam flour, using that we can make in minutes. I have a sevai presser and I made it with that.

Ingredients

Idiyappam flour – 1 cup
warm water as required
salt as per taste

For Coconut milk

Coconut – 1
Cardamon – 1
Sugar as per taste
Method

1. Combine flour and salt and make a dough.
2. I used sev presser, you can use murukku presser also for this.
3. Steam the made iddiyappam in a idli cooker or a pressure pan.
4. Grind the coconut combing cardamom and sugar.
5. Strain and repeat the process once .

Your delicious iddiyappam and thengai pal is ready.

PASTA AND CORN IN WHITE SAUCE


I tasted this in a restaurant and i tried replacing mushroom with corn. It tasted so good. This is my kids favourite recipe so i am going to send this to Cooking for kids hosted by Sharmi.

Ingredients

Pasta - 1 cups
Corn - 1 cup
Milk - 2 cups
Pepper powder as per taste
Oregano - one generous pinch
Salt to taste
Butter - 1 tbsp
Maida - 1 tbsp

Method

1. Cook the pasta as per the instructions and keep aside.
2. Heat butter in a pan, when melted add maida and saute on medium heat till the raw smell goes, keep stirring in between. (Should not turn brown)
3. Remove from heat and add 1 cup of milk mixing to make sure there are no lumps.Add the rest of the milk mix and make sure there are no lumps.Put back on the heat and cook on medium till the sauce thickens. Keep stirring in between. Add the salt, pepper and dry oregano. Mix well.
4. Add the cooked pasta and corn and mix well.

Ingredients

Mushroom - 200 gms
Milk - 2 cups
Butter - 1 tbsp
Maida - 1 tbsp
Salt as per taste
Pepper powder as per taste
Oregano one generous pinch

Method

1. Clean the mushrooms in warm water and chop it, cook the pasta as per the instructions and keep aside.
2. Heat butter in a pan, when melted add maida and saute on medium heat till the raw smell goes, keep stirring in between. (Should not turn brown)
