I used to grind wheat with soy bean for my rotis. One time i bought Multi grain atta of Pillsbury. Then I thought of making multi grain atta in home. I used the ingredients of Kanchi Mavu excluding some things and including some ingredients. The colour will be slightly dark comparing to whole wheat atta but the taste and the soft is so... good. Dosa made out of this flour is so.. crisp and tasty.

KAMBHU/ PEARL MILLET - 200 GMS

BARLEY - 100 GMS
SOY BEAN - 200 GMS

the phulka comes real fluffy too.
This atta needs resting time for 1 hour to 2 hours.
If you want to make in the morning knead atta and keep in the fridge at night.
