PEARL MILLET FLAKES DUMPLING/ கம்பு அவல் கொழுக்கட்டை


Millets have lots of nutrients, it helps in weight loss too. Instead of making upma I thought of making this. Tried for evening snack and it cam out so good. Kids liked it. 





INGREDIENTS

Peral millet flakes / கம்பு அவல் - 1 cup

Onion - 1

Green chili - 4

Grated coconut - 1/2 cup

Curry leaves - few

Coriander leaves - few

Salt to taste


For Tempering

Oil - 1 tbsp

Mustard seeds - 1 tsp

urad dhal - 1 tbsp

Channa dhal  - 1 tbsp

 




METHOD

Soak the flakes / Aval in water for 15 minutes. And wash it.




In a strainer add a cotton cloth and add the soaked flakes and drain it nicely. Keep it aside.



Heat oil in a pan, add mustard seeds, let it splutter. Add urad dhal, channa dhal and saute. Add chopped onions , green chilis , curry leaves and coriander leaves. saute.


Add grated coconut and salt and sauté nicely. 




In a bowl add the drained flakes mixture.




Add the sautéed onions etc and mix well. 



Grease the Idli plate and make balls or desired shapes and steam it for 5 to 7 minutes.




Enjoy with your choice of chutney.

DRUMSTICK SOUP/ முருங்கை காய் சூப்

 

Everyone knows drumstick has lots if nutrients. I don't make this soup because of the tedious work of removing the flush from the drumstick. When my friend Viji told me this method , I tried this and its  a hit in my home. Simple yet healthy snack. Very good as a evening snack on a rainy day. 




INGREDIENTS



Drum stick pieces - 15 to 20 nos

Shallots -  10 to 15 nos

Garlic pods - 5 to 6

Ginger - 1 " piece

Bay leaf - 1

Butter - 1 tsp

pepper powder or pepper corns as per taste

salt to taste



METHOD


In a pressure cooker add butter and add shallots, garlic , drumsticks , bay leaf and sauté nicely.

Add water and cook nicely for 3 to 4 whistles.





when it cools down , remove the bay leaf, add pepper corns if you are using  and grind to a paste. 

Add some  water to adjust the consistency , strain it and boil it .





Add salt and pepper powder if  you are using.

Enjoy with bread toast.

WHOLE WHEAT EGGLESS BANANA WALNUT BREAD





Happy new year to all. Hope to be regular in posting recipes. This year I have started baking . Learnt this recipe from my good friend Hetal, Tried for the first time it came out so well.I was so happy to see the out come. I replaced sugar with brown sugar.




INGREDIENTS

Whole wheat flour - 1 1/2 cup

Sugar - 1/2 cup ( I used brown sugar)

Banana - 2  Big ( I used 4 small bananas)

Refined oil  or Coconut oil - 3/4 cup + 1 tbsp
Or 
Oil 3/4 cup and butter 1/4 cup


Baking powder -  1 1/2 tsp

Baking soda -  1/2 tsp

Vanilla essence - 1 tsp

Finely chopped walnuts - 1/4 cup

Raisins - 1 tbsp 


METHOD

1. Preheat the oven for 10 minutes  at 180 * degree

2. Mix the dry ingredients ( flour, Baking powder,baking soda, Walnuts and raisins.  




 3. Mash the bananas, and mix all the wet ingredients  ( oil, sugar and vanilla essence. )

Mix properly till the sugar dissolves nicely.





4. Combine the wet and dry ingredients and mix well. The       dough will be slightly thick,






5. Transfer to the Baking tray leaving space to raise.





6. Bake for 20 to 25 minutes , Adjust the timings according to your oven .




Insert a fork and check whether it has done

Enjoy your healthy banana bread.

NOTE

You can replace sugar with jaggery too.

You can increase banana , it gives more flavour and moist.

You can add choco chips or chocolate chunks

SPINACH CORN SANDWICH

Today is the last day of BM # 19. We had this sandwich long back in Cafe Coffee day. Everybody liked it, I was thinking I should make, I used this opportunity to try this, it taste yum. I adopted the recipe form  Chef Sanjeev Kapoor  
 
 
 
 

Ingredients

Spinach leaves (palak),blanched 20-25
American corn kernels 1/2 cup
Cheese,grated 1/2 cup
Brown bread slices 8
Onion 1 medium
Garlic 2 cloves
Olive oil 1tablespoon
Green chili 1
Salt to taste
Black pepper powder 1/2 teaspoon
 

METHOD 

 
Heat oil in a pan , add chopped onion, garlic and green chili.
 

 
 
When the onion and garlic are cooked add chopped palak.
 


 
When the palak has cooked add the boiled corn.
 
 

 
 
When everything blended nicely add cheese, pepper powder and salt and mix well.

 
 
 
I added some mayonnaise also to the mixture.

KEERAI PONGAL / SPINACH WITH RICE AND LENTILS

Today is first day of BM # 19 group 4. I have chose to cook with greens for 3 days. This recipe also I learnt from Mrs. Revathy Shanmugam's cookery show. Its very simple and delicious. Kids loved this. A twist from the ordinary pongal.
 
 
 



INGREDIENTS

Spinach / palak - 1 bunch
Rice - 1 cup
Moong dhal - 1/2 cup
Coconut milk -  1 cup
Onion - 1
Garlic - 3 pods
Crushed pepper corns - 1 tsp
Cumin seeds - 1 tsp
Salt to taste
Ghee - 1 tbsp
Cashew - few ( Optional)
 curry leaves for tempering

METHOD

Cook the chopped spinach leaves by giving one whistle.Make puree.

Combine rice , moong dal and cumin seed and pressure cook .


In a pan heat oil add garlic, onion and curry leaves.



When it is cooked , add spinach puree.cook until it blends.


 
Mash the rice , add the spinach mix to that. Add pepper powder, salt. coconut milk and cook until it blends nicely.


 
Garnish with cashews if you are using.
 
 
 
 
 
 
You can serve with pickle.
 
We have to add coconut milk carefully , if we add more the consistency will change.

PAPAYA SMOOTHIE

When I was discussing with my friend she told me the recipe, I added some ingredients , it was tasting so good. Kids and Hubby dear enjoyed this. Usually i add sugar , this was a different one. Healthy and refreshing and filling too.




INGREDIENTS

Papaya chopped - 1 cup
Curd -  1 cup
Ice cubes - 6 to 7
Black Salt - 1/2 tsp
Chat masala  1/2 tsp
Mint leaves  -  10
Ginger - 1/2 inch piece (optional)



METHOD

In a blender combine all the ingredients and run until it blends together.

Enjoy the refreshing drink.

PINA COLADA

We tasted this in a restaurant, I wanted to try for so long. when Valli announced this kids delight this came in my mind. I adopted the recipe from Raks Kitchen. I am a big fan of her food photography.




INGREDIENTS



Pineapple juice - 3 cups

Fresh coconut milk   1 cup

salt a pinch

Sugar  to taste

ice as required






METHOD



Combine all the ingredients in a blender and serve.

MOONG DAL KOTHU IDLI

Today is the last day of blogging  marathon. I am so happy to be a part of this marathon. Thanks Valli for organising such a wonderful marathon. 

My friend Preethi told that she will make Idli with green moong dal. I thought I will also make but i had my own doubt , my husband and kids wont like the colour. So i made this Idli but served as Kothu Idli.  They liked so much.



INGREDIENTS FOR IDLI.


Green moong dal - 1 cup
Eno salt - 1 tsp
Green chili - 1
Salt as required

How to make Idli

  • Soak the green moong dal for 1 hour.
  • In a mixer add green chili, salt and moong dal and grind.
  • Before making idlis add eno salt and make idlis.




INGREDIENTS


Moong dal idli - 7 to 8
Onion - 1 big size

Tomato - 2
Sambhar powder - 1 tbsp

salt to taste

garam masala - 1/2 tbsp

Oil, mustard seeds , urad dhall, curry leaves for tempering

METHOD

  • Chop the idlis in to small cubes.
  • Heat a kadai with oil and pop up mustard seeds add urad dhall and curry leaves. Add onions and saute till they turn pink.
  • Add  tomatoes and saute.
  • Add Sambhar powder and salt and saute
  • Saute till the raw smell goes and it leaves oil.
  • Add the chopped idlis and add little water and close with the lid.
  • After 2 minutes the yummy kothu lidi is ready.

MIXED VEGETABLE SPROUT URAD DAL SALAD


This salad I tasted in my Tupperware Assembly. It tasted so yum. My family members liked this.




INGREDIENTS


Black urad dal  1 cup
Onion - 1
Tomato - 1
Capsicum - 1
Cucumber - 1
Carrot - 1
Lime juice - 2 tbsp
pepper powder and salt as per taste

How to make

  • Soak black urad dal for 8 hrs, strain and tie in a muslin cloth for 8 hrs. your sprouts is ready.
  • Chop finely all the vegetables.
  • Add lime juice , salt and pepper and toss well.
  • Healthy salad is ready.

SATHUMAVU KANCHI / MULTIGRAIN PORRIDGE




A healthy drink which I give to my kids when they turned one. when my daughter was one-year-old pediasure came into the market when i asked my paediatrician he told me i can give sathumavu kanchi it is equivalent to that. my mom makes it for me all the time. This time when she came i learnt how to prepare this. Only thing which takes time is this dry roasting all the ingredients.

When I am fasting and i take this , my daughter love this.





Ingredients

WHEAT - 500 GMS


GREEN MOONG DHALL - 500 GRAMS

  

CHANNA/ CHICKPEA - 100 GMS


MAIZE/CORN - 100 GMS


CHOLAM/SORHUM - 100 GMS


SOYA BEAN - 100 GMS



CASHEW


ALMOND





SEASAME SEEDS


Method

  •  Dry roast all the ingredients separately. (except cashew and Almond)
  • I forgot to take the picture of the roasted one.
  • Ground to powder by giving it to a flour mill. (Except cashew, almond and sesame seeds)
  • Powder seasme seeds and cashew, almond in mixie.
  • You can store it in a air tight container.
  • Take 1 tbsp (required qty) add milk and make a mix( you can use water also).
  • boil it , keep stirring.
  • Add milk to make a thin consistency.




Note
  • You can add peanuts also in this, my mom says the kanchi mavu will spoil quickly.
