GUEST LUNCH AND LEMON JUICE
I learnt this recipe in a TV show. I just wanted to try , but somehow it was getting delayed. Last week my hubby went out of station for 2 days, since it is summer holidays, i asked my friend Hema to come for staying. I thought let me try this recipe for them. It came out well and she and kids like this. We had a good time chatting all night, and of course the kids enjoyed. We had a good time. I made coconut rice , double beans gravy , Cauliflower Manchurian and lemon Juice. I made poori aloo for dinner.
Coconut Milk Rice
Basmati rice – 1 cup
Coconut milk - 1 cup
Water – ½ cup
Garlic – 7 to 8 pods

Salt to taste
Method
1. Wash and soak rice in half cup of water.
2. Combine the rice, garlic pods and coconut milk in a vessel and pressure cook.

Double Beans Gravy
Double beans – 1 cup
Onion – 1 medium
Tomato – 2 medium
Salt to taste
Ginger - ½ inch
Garlic – 2 pods
Chili powder – 1 tbsp ( I used Everest curry powder)
Cilantro for garnishing
Oil , jeera ( recipe asked for clove, cinnamon stick)
Method
1. Pressure cook the double beans.
2. Grind Onion, ginger and garlic to a paste.
3. Make tomato puree.
4. Heat oil and temper the cumin seeds and add the onion paste.
5. When the raw smell gone add the tomato puree.
6. When the raw smell goes add the salt, curry powder and saute
7. When the masala blends together add the cooked double beans.
8. Cook for a two to three minutes and garnish with Cilantro.

Cauliflower Manchurian
Lemon Juice
Lemon – 2
Salt a generous pinch
Sugar – 3 tbsp ( sugar free Natura)
Ice cubes – 6
Combine all the ingredients in a mixer and blend it together. You can substitute sugar with sugar free also.

Rice is really delectable with the addition of coconut milk they should taste really great... Double beans curry, the best companion for the rice... So are the cauliflower florets, they look crispy... and finally a refreshing drink...

this coconut milk rice is a famous malaysian veg.dish. yesterday only a malaysian friend told me how to cook this.They make a dish called sambal"made with tofu and red chilli paste.i could imagine the yummy taste of the rice with double beans gravy.hema would have enjoyed a lot.missed it.
