ENNAI KATHRIKAI KOZHAMBHU
This is made of small brinjals. This is one of my father in laws favourite. Even though my father in law doesn't like onions much he likes this. MY mom in law also likes this, she likes all vathakozhambu.
Ingredients
Small brinjals – 3 to 4
Small onion – ½ cup
Tomato – 1 small
Tamarind extract – ½ cup
Sambar powder – 1 tbsp
Curry powder (recipe given) 2 tbsp
Salt to taste
For seasoning – oil,mustard seeds,fenugreek seeds, cumin seeds, curry leaves
Method
1. Cut the brinjals from both sides and stuff the curry powder.
2. Heat oil in a pan and season all the things mentioned.
3. Add onions and saute it and add tomatoes.
4. After it cooked add brinjals. Saute for 2 minutes and tamarind extract.
5. Add sambhar powder and salt. We have to add both accordingly because we have stuffed curry powder.
6. Close and cook until the brinjals are boiled and the raw smell has gone.
7. It goes well with rice and curd rice.

I Love Brinjals, specially small one.. I make Brinjal curry frequently.. but never tried Sambar Powder in it.. I wll try it in my brinjal curry.. thanks for sharing
