Paneer is my daughter's favourite. Since it contains milk protein , I used to make her sandwiches, parathas etc. I read this recipe in one book and i thought of making it, my daughter liked it so much.
Paneer – 1 cup crumbled
Onions – ½ cup chopped
Tomatoes – ½ cup chopped
Ginger – 1” piece chopped
Green chili – 1 chopped
Turmeric powder – one pinch
Chili powder – ½ tsp
Oil and salt
1. Take the oil in a microwave safe bowl and add the onions and microwave on high for three minutes, stirring once after ½ minutes.
2. Add tomatoes, ginger and green chili and turmeric powder. ( I avoided green chili because I made for kids)
3. Add the paneer and mix well.
For the Toast
1.Using the grill+ oven option , preheat the oven for 5 minutes.
2. Place the bread slices on the metal rack and using the oven and grill option toast for 5 minutes , till they are crisp and lightly browned.
Top the panner Bhuji on the toasts and garnish with coriander leaves and serve.
(I did n’t have cilantro on that day)
The recipe includes ¼ capsicum chopped, since I did n’t have on that day , I skipped it.
This is my daughter's lunch box favorite. With cucumber salad, she love to take it for her lunch box.
Onion – ¼ chopped
Panner – ½ cup crumbled
Chili powder, garam masala and salt to taste
Oil, cumin seeds
Heat oil in the pan and add cumin seeds, add onion and saute it.
Add the chili powder, salt and garam masala.
After the raw smell gone, add the paneer and mix well.
Stuff inside the paratha and toast it both sides.
