Happy to be the part of BM # 15. Thanks to Srivalli. This time i am going to post in the theme Kids Delight - Fruits. My kids love to take fruits to the school for their snack. My son and daughter loves kesari, this was in my mind for so long time and i used this opportunity to prepare this.I adapted the recipe from Indian Vegetarian kitchen.
Suji/ rava - 1 cup
Water - 21/2 cups
Sugar - 2 cups
Ghee - 1/2 cup
Pine apple pieces - 1/2 cup
Yellow colour - one pinch (optional)
Pineapple essence - few drops ( optional)
Cashew, raisins for garnishing
Heat a pan and fry cashew and raisins and keep it aside. Heat ghee and fry the suji.
Boil water in a pan with pineapple pieces. When it boils add the suji.
When the suji has cooked, add the sugar and cook well. Add food colour and pineapple essence.
when it blends well and it leaves the sides , switch off the flame.
Garnish with cashew, raisins.
